Nalysnyky recipe

Nalysnyky is a traditional Ukrainian dish that are typically eaten on special occasions such as a wedding, birthday, Christmas, etc. This dish is a crepe that has the most common filling cottage cheese but can also have fruit, dill, or sweet cheese filling. Nalysnyky are often prepared in huge batches by babas and mothers making the creation of this dish a labor of love.

Ingredients for pancakes:

6 eggs

1 cup of Water

1 cup of Milk

1 cup of Flour

1/2 Tsp of Salt

Ingredients for Cottage Cheese Filling:

3 cups of dry Cottage Cheese

3 egg yolks

1/2 Tsp of Salt

2 Tbsp of rich cream

How to make Pancakes:

Mix eggs, water, milk, flour, and salt altogether until it is a smooth slightly thick consistency of batter.

Pour a small amount of oil in a small skillet over medium heat. Pour about 1/4 cup of batter (enough to cover the bottom skillet thinly), then tilt pan back and forth to spread batter evenly. When lightly browned on the bottom and firm to the touch on top.

Once ready remove from the pan.

How to make Cottage Cheese Filling:

Mash or put together dry cottage cheese through sieve. Add the remaining ingredients egg yolks, salt, and rich cream then mix. Mix until it has a smooth spreading consistency.

Spread all pancakes with cottage cheese filling; roll pancakes then place rolled cakes in buttered casserole or baking dish.

Continue in this manner until all batter and cottage cheese filling is used up. dot with butter and place casserole dish in oven at 350F. Bake for 30 minutes.

Serve hot with sour cream and enjoy!
